1 teaspoon crushed garlic
2 tablespoons flaked almonds
3/4 (300g) tin chopped mushrooms, drained
1 tablespoon brandy
1 teaspoon dried tarragon
225g wedge Brie cheese, rind removed

Preheat oven to 180 C / Gas 4.
Melt butter in a medium saucepan over medium heat. Mix in garlic and almonds, heating until almonds are lightly browned. Stir in mushrooms and cook until tender, about 5 minutes. Cover with brandy and sprinkle with tarragon.
Place Brie in a small baking dish. Pour the mushroom and brandy mixture over Brie. Bake in the preheated oven 20 minutes or until bubbly.
An easy recipe and good starter, unfortunately I served it with too much toasted bread and didn't leave it in the oven long enough for all the cheese to melt but it was still very enjoyable. Next time I want to try it with Applewood cheese. - 03 Oct 2013
