Avocado and sunflower seed salad

    This is one of my favourite summer salads. Sunflower seeds add texture and are good for you!

    Serves: 4 

    • 6 tablespoons olive oil
    • 1 1/2 tablespoons red wine vinegar
    • 1 1/2 tablespoons balsamic vinegar
    • 1 clove garlic, minced
    • 1 tablespoon mayonnaise
    • salt and freshly ground black pepper to taste
    • 2 heads little gem lettuce - torn
    • 50g (2 oz) sunflower seeds
    • 2 avocados - peeled, stones removed and sliced

    1. Whisk together the olive oil, red wine vinegar, balsamic vinegar, garlic and mayonnaise. Season with salt and pepper to taste.
    2. In a salad bowl, combine the lettuce and sunflower seeds. Toss with enough dressing to coat. Top with sliced avocado and serve.

    Not the most attractive salad in the world. The two vinegars make it extremely sharp and overwhelms the avocado completely. Despite that, it is very edible but I may halve the vinegar in future.  -  29 Apr 2015
