Baked Stuffed Prawns

    Serve this elegant dish as a starter or part of a main course. Prawns are stuffed with seasoned butter and baked to perfection.

    Serves: 4 

    • 40g cream crackers, crushed
    • 110g fresh breadcrumbs
    • 1 tablespoon garlic granules
    • 110g butter, melted
    • 1 tablespoon Worcestershire sauce
    • 1 pinch ground black pepper
    • 2 tablespoons grated Parmesan cheese
    • 125ml dry white wine
    • 16 king prawns, peeled and deveined, with tails

    1. In a medium bowl, mix crackers, breadcrumbs and garlic granules. In a small bowl, blend butter and Worcestershire sauce. Mix blended butter, pepper and Parmesan cheese into the cracker mixture. Stir in white wine, using only enough to hold together the mixture.
    2. Preheat oven to 200 C / Gas 6.
    3. Butterfly the prawns using a sharp knife and arrange back side up in a large baking dish. Stuff prawns with heaped tablespoons of the cracker mixture.
    4. Bake 20 minutes in the preheated oven, until cracker mixture is lightly browned and the prawns are opaque.

    Adding more flavor to the stuffing would help. Crabmeat (usually in seafood stuffings), garlic, seasoned bread crumbs, etc, makes a big difference. When "stuffing" the shrimp curl the tail down into the stuffing so it holds it in place. Also...drizzle with butter and you will get a tastier and more attractive shrimp.     I didn't use any crackers but processed fresh bread crumbs from an herb bread that I made several days ago. I also sauteed minced onion and red pepper in butter and then added the crumbs to toast them a bit. For some extra added goodness I added crab meat to the mixture and made a roasted garlic and butter sauce to spoon over the top. Yum!  -  30 May 2005  (Review from Allrecipes US | Canada)


    This is a great recipe! A fast and easy way to dress up prawns. I found that it was easier for me to layer the prawns in the pan, and top them with the crumb mixture....I'm sure that wouldn't work so good for dipping them after, but is great as a dinner main dish.
