About this recipe: Don't be put off by the mayonnaise in this delicious cake. It adds to the flavour and texture. Serve for everyday enjoyment or special occasions, such as birthdays.

Serves: 12 

  • For the Cake
  • 200g caster sugar
  • 250g plain flour
  • 2 teaspoons bicarbonate of soda
  • 125ml water
  • 250g mashed bananas
  • 1 pinch salt
  • 250ml mayonnaise
  • For the Icing
  • 225g cream cheese
  • 225g butter, softened
  • 480g icing sugar
  • 2 teaspoons vanilla extract
  • 90g chopped walnuts (optional)

  1. Preheat oven to 180 C / Gas 4. Lightly grease two 23cm round cake tins.
  2. Combine sugar, flour, bicarbonate of soda, water, mashed bananas, salt and mayonnaise. Mix together and pour into the cake tins.
  3. Bake in preheated oven for 45 minutes or until a skewer inserted in the centre comes out clean. Remove from oven and cool on wire racks.
  4. In a mixing bowl, blend cream cheese and butter together. Gradually add sugar and vanilla and mix well. Stir in nuts. Fill and ice the cake.
