Banana Walnut Loaf

    A quick bread that's perfect for afternoon tea. Simply place all of the ingredients into a bread maker and let it do its magic. The cake is moist, tender and utterly delicious.

    Ingredients
    Makes: 1 loaf

    • 110g margarine, softened
    • 150ml milk
    • 2 eggs
    • 310g plain flour
    • 200g caster sugar
    • 2 1/2 teaspoons baking powder
    • 1/2 teaspoon bicarbonate of soda
    • 1 teaspoon salt
    • 150g mashed bananas
    • 60g chopped walnuts

    Method
    Prep:15min  ›  Cook:1hr30min  ›  Extra time:3hr cooling  ›  Ready in:4hr45min 

    1. Spray bread machine pan with vegetable oil spray.
    2. Mix together the ingredients in order listed. Place mixture in bread machine pan.
    3. Select the Quick Bread/Cake cycle. Press Start. Check after 1 minute to see if mixture is well blended.
    4. Cook until cycle stops. Remove pan and cool completely before removing cake from pan.

    My Breadman machine has a "batter breads" cycle...which means you can use this recipe without premixing ingredients...the whole cycle is 1 hour 40 minutes and does the mixing and baking. I only bake with butter, and this bread was so yummy, I may have eaten half of it myself!!!     Excellent recipe. Used a Welbilt (ABMY2K1) with Quick cycle that consists of a 3 minute Knead1, a 5 minute rest, a 5 minute Knead2, and a 90 minute bake.
