Oaty Banana Bread

    This moist cake is simple to make and tastes fabulous. It's made with oats, bananas and raisins. Enjoy thickly sliced as a snack, for afternoon tea or elevenses.

    Makes: 1 loaf

    • 100g margarine
    • 200g caster sugar
    • 2 eggs, beaten
    • 1/2 teaspoon vanilla extract
    • 125g plain flour
    • 80g porridge oats
    • 1 teaspoon bicarbonate of soda
    • 1/2 teaspoon salt
    • 1/2 teaspoon ground cinnamon
    • 350g mashed bananas
    • 4 tablespoons milk
    • 75g chopped raisins (optional)

    1. Preheat oven to 180 C / Gas 4. Grease one 23x13cm loaf tin; set aside.
    2. Cream together the margarine and sugar. Add eggs and vanilla, beat until fluffy.
    3. Sieve together the flour, oats, bicarbonate of soda, salt and cinnamon. Add dry ingredients alternately with bananas and milk. Mix until blended.
    4. Fold in raisins and pour into prepared tin. Bake for 50 to 60 minutes; remove from oven and cover for 5 minutes.

    Lovely recipe; thanks for posting it. Moist, delicious, healthy(ish!), and great for kids. After after reading the reviews that people had problems with baking it all the way through, I found a consistent 170C fan oven setting for about 55 minutes, then covered by foil for about 25 minutes out of the oven, worked well.     Something else. This tasted wonderful but next time I am going to cook it for longer on a lower heat as the outside was starting to burn and the centre was still raw.  -  13 Feb 2011


    this cake tasted lovely, i used ground ginger instead of cinnamon as i don't like cinnamon - although i have to agree with the previous reviewer about the cooking times as mine too was burning but not quite cooked in the middle - all in all a nice recipe but need to work on the cooking time and temp  -  14 Sep 2012
