Banana, Raisin and Walnut Cake

About this recipe: This banana cake is incredibly moist, lightly spiced and dotted with raisins and walnuts. Serve with a simple dusting of icing sugar or top with cream cheese icing.


Makes: 1 25cm tube cake

  • 375g plain flour
  • 400g caster sugar
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 300g diced bananas
  • 250ml corn oil
  • 1 1/2 teaspoons vanilla extract
  • 3 eggs
  • 150g raisins
  • 125ml water
  • 60g chopped walnuts

  1. Sieve together the flour, sugar, bicarbonate of soda, cinnamon and salt.
  2. Add bananas, oil, vanilla, eggs, raisins, water and nuts. Stir to incorporate, then pour into a greased 25cm tube cake tin.
  3. Bake at 180 C / Gas 4 for 1 1/2 hour or until done. Cool on wire rack before removing from the tin.
