Chocolate Chip Cake Bars

    A wonderful snack to enjoy anytime of the day. They are quick and easy to make and taste fantastic. The bars are buttery and dotted with chocolate chips and walnuts.

    Makes: 24 bars

    • 110g butter
    • 110g dark brown soft sugar
    • 2 tablespoons water
    • 1 egg
    • 520g sponge cake mix
    • 120g chopped walnuts
    • 340g plain chocolate chips

    1. Preheat oven to 180 C / Gas 4. Grease a 20x30cm baking tin.
    2. In a large bowl, cream together the butter and sugar until light and fluffy. Mix in water and egg, then stir in sponge cake mix. Finally, mix in nuts and chocolate chips. Spread mixture into tin.
    3. Bake for 30 to 35 minutes in the preheated oven. Cool completely before cutting into bars.

    I made these last night. They were a big hit with my family. I used a yellow cake mix because it was what I had on hand. I added a little vanilla extract, two eggs, and a little oil. Delicious! Very easy to make, and a very quick clean up.  -  08 Jan 2008  (Review from Allrecipes US | Canada)


    I added 1/3 cup of water as other suggested. I also added dried cranberries, white chocolate chips, and oatmeal. I have taken them to several parties and they have been a hit! Be sure to not over cook them - I take them out just before they look done because they firm up as they cool.
