    About this recipe: A fantastic way of getting more omega-3 fatty acids into your diet. Trout is grilled with a delicious blend of butter, lemon juice, paprika, cayenne and barbecue sauce.

    Serves: 6 

    • 900g rainbow trout fillets
    • 50g butter, melted
    • 2 tablespoons lemon juice
    • 1/4 teaspoon paprika
    • 1/8 teaspoon cayenne pepper
    • 4 tablespoons barbecue sauce

    1. Preheat a barbecue for medium heat and lightly oil the cooking grate.
    2. Arrange the trout fillets on large piece of foil. Mix together the butter, lemon juice, paprika and cayenne pepper; brush the mixture onto the fillets.
    3. Cook on the preheated barbecue until the fish flakes easily with a fork, about 10 minutes; brush the fillets with the barbecue sauce; cook another 2 minutes.
