Grilled Halibut with Coriander Butter

    A light, refreshing and incredibly delicious barbecued fish dish. Halibut is seasoned with lime juice, grilled on the barbecue and served with a lime, garlic and coriander butter.

    Serves: 4 

    • 4 (175g) fillets halibut
    • 1 lime, cut into wedges
    • salt and pepper to taste
    • 3 cloves garlic, coarsely chopped
    • 25g chopped fresh coriander
    • 1 tablespoon fresh lime juice
    • 30g butter
    • 1 tablespoon olive oil

    1. Preheat a barbecue for high heat. Squeeze the juice from the lime wedges over fish fillets, then season them with salt and pepper.
    2. Grill fish fillets for about 5 minutes on each side, until browned and fish can be flaked with a fork. Remove to a warm serving plate.
    3. Heat the oil in a frying pan over medium heat. Add the garlic; cook and stir just until fragrant, about 2 minutes. Stir in the butter, remaining lime juice and coriander. Serve fish with the coriander butter.

    never tried halibut and this recipe was perfect - nice tangy sauce really compliments the fish. I grilled the fish instead of bbq'in it too and it worked really well  -  11 Apr 2011


    Made it healthier. used diet flora instead of butter and used 1/2 a lime in the sauce - the entire (4 servings now) is P2 on the weight watchers pro points plan  -  11 Apr 2011


    Very good. I marinated fish for 6-7 hrs in garlic,olive oil cilantro and lime juice, then seared in olive oil, and added a lid to finish cooking. After removing the fish to a plate, I dumped the marinade into the fry pan, cooked for a few minutes with some additional lime juice, then stirred in the butter until melted.
