About this recipe:A great basic cake, which is perfect for afternoon tea. Serve with a simple dusting of icing sugar or spread with your favourite icing.

2 egg whites
1 egg yolk
225g plain flour
1 teaspoon baking powder
1/2 teaspoon bicarbonate of soda
1 tablespoon vanilla extract
100g caster sugar
4 tablespoons icing sugar
4 tablespoons dark brown soft sugar

Preheat oven to 170 C / Gas 3. Grease and flour two 20x10cm loaf tins. Sieve together the flour, baking powder and bicarbonate of soda, set aside.
In a medium bowl, cream together the butter, caster sugar, icing sugar and dark brown soft sugar until smooth. Add egg whites and egg yolks, beating after each addition. Stir in the vanilla. Stir in the dry ingredients alternately with the milk. Divide the batter evenly between the two tins.
Bake for 60 to 70 minutes in the preheated oven, until a skewer inserted in the centre of the cake comes out clean. Cool in the tins for 10 minutes before inverting onto a wire rack to cool completely.
