    About this recipe: This cheesecake recipe is easier than most baked cheesecakes - you don't have to fret about the top cracking because it is covered with a gorgeous mixture of sliced apples, cinnamon and sugar. I get many requests for the recipe.

    Serves: 10 

    • 175g butter or margarine, softened
    • 1/2 teaspoon vanilla extract
    • 200g plain flour
    • 100g sugar
    • 550g cream cheese, softened
    • 4 tablespoons caster sugar
    • 2 eggs
    • 3/4 teaspoon vanilla extract
    • 375g apples - peeled, cored and thinly sliced
    • 1 teaspoon ground cinnamon
    • 100g sugar

    1. Preheat oven to 180 C / Gas 4.
    2. Mix together 175g butter, 1/2 teaspoon vanilla extract, plain flour, and 100g of sugar in a bowl. Press the mixture into the bottom of an ungreased 23cm (9 in) springform cake tin.
    3. Beat together the cream cheese and 4 tablespoons sugar in a large bowl. Stir in the eggs and 3/4 teaspoons vanilla extract. Pour the mixture over the base.
    4. Combine the sliced apples, cinnamon, and 100g sugar in a bowl. Spoon apple mixture evenly over the cream cheese mixture. Place the springform tin on a baking tray.
    5. Bake in preheated oven until centre is set, 50 to 65 minutes.
