Easiest apple cheesecake

    This cheesecake recipe is easier than most baked cheesecakes - you don't have to fret about the top cracking because it is covered with a gorgeous mixture of sliced apples, cinnamon and sugar. I get many requests for the recipe.

    Serves: 10 

    • 175g butter or margarine, softened
    • 1/2 teaspoon vanilla extract
    • 200g plain flour
    • 100g sugar
    • 550g cream cheese, softened
    • 4 tablespoons caster sugar
    • 2 eggs
    • 3/4 teaspoon vanilla extract
    • 375g apples - peeled, cored and thinly sliced
    • 1 teaspoon ground cinnamon
    • 100g sugar

    1. Preheat oven to 180 C / Gas 4.
    2. Mix together 175g butter, 1/2 teaspoon vanilla extract, plain flour, and 100g of sugar in a bowl. Press the mixture into the bottom of an ungreased 23cm (9 in) springform cake tin.
    3. Beat together the cream cheese and 4 tablespoons sugar in a large bowl. Stir in the eggs and 3/4 teaspoons vanilla extract. Pour the mixture over the base.
    4. Combine the sliced apples, cinnamon, and 100g sugar in a bowl. Spoon apple mixture evenly over the cream cheese mixture. Place the springform tin on a baking tray.
    5. Bake in preheated oven until centre is set, 50 to 65 minutes.

    This was a pretty good recipe. The crust was quite hard to cut through, though. And definitely use the cookie sheet underneath, because something leaked out during the baking time. But overall, we enjoyed the dessert.  -  12 Nov 2007  (Review from Allrecipes US | Canada)
