Oyster and Brie crostini

    Crisp slices of baguette are topped with Brie cheese, oysters and colourful strips of red pepper. You can use plain oysters or smoked oysters in this recipe, which is sure to please every guest - oyster lovers especially.

    Serves: 12 

    • 1 wholemeal baguette
    • 2 tablespoons olive oil
    • 340g Brie cheese
    • 24 oysters - shucked, rinsed and drained
    • 50g butter, melted
    • salt and pepper to taste
    • 1 red pepper, cut into thin strips

    1. Preheat oven to 180 C / Gas 4. Slice the baguette into 24 rounds. Brush slices lightly with olive oil on both sides. Place slices on a baking tray.
    2. Toast the baguette slices in the preheated oven just until crisp, 5 to 8 minutes, turning once. Meanwhile, slice Brie into 24 equal pieces. Remove toasted baguette slices from oven; top each round with a slice of Brie cheese. Return the crostini to the oven to melt the cheese, about 5 minutes.
    3. Preheat the grill and set the rack about 15cm (6 in) from the heat source. In an ovenproof baking dish, stir together the oysters, butter, any remaining olive oil, salt and pepper.
    4. Grill until the oysters begin to curl at the edges, about 5 minutes. Remove the oysters; place one oyster on top of each crostini. Top the crostini with red pepper strips; serve warm.

    It was sooo good!!!! made it lastnight for Valentine's dinner as my hubby forgot to make reservations so all I could find were 6 oysters at the store and it came out great!!
