    About this recipe: This is a hearty soup that is easy and cheap to make. Mince, kidney beans, garlic, onion and tomato combine for a warming soup that is perfect for a midweek supper with some crusty garlic bread.

    Ingredients
    Serves: 6 

    • 1 tablespoon vegetable oil
    • 250g minced beef
    • 1 large onion, chopped
    • 1 clove garlic, minced
    • 2 (400g) tins chopped tomatoes
    • 1 (400g) tin kidney beans, drained
    • 1 sachet dried vegetable soup mix
    • 250ml water
    • 4 tablespoons stellete soup pasta

    Method

    1. Heat oil in a large saucepan over medium-high heat. Crumble mince into pan and cook, stirring frequently, until well browned. Remove mince, leaving excess oil in pot.
    2. Cook onion and garlic in oil over medium-high heat until translucent. Stir in tomatoes, kidney beans, vegetable soup mix, and water. Reduce heat, and simmer 40 minutes.
    3. Add pasta, cover and simmer 20 minutes more, or until pasta is tender. You may add more water at any time to adjust consistency.

    I love this recipe. GREAT "car camping" food. I make the whole dish in the evening, eat about half of it, and then put the rest in my thermos for lunch the next day. I used mac-noodles instead of stars, as I couldn't find any--still great.     Very good soup. My parents and my husband all liked it, and it's not hard. I used ditalini pasta because I couldn't find the stars. I ended up adding two cans of tomato soup and water to give it more liquid.  -  06 Aug 2004  (Review from Allrecipes US | Canada)
