My mother in law's macaroni salad

    An easy pasta salad with thinly sliced radishes, spring onions, celery and a bit of mayonnaise.

    Serves: 10 

    • 450g macaroni pasta
    • 1 bunch radishes, sliced
    • 1 or 2 spring onions
    • 6 thin celery sticks, chopped
    • 4 tablespoons mayonnaise
    • salt and pepper to taste

    1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; rinse under cold water, and drain.
    2. In a large bowl, combine the pasta, radishes, spring onions, celery, mayonnaise, salt and pepper. Mix well, chill, and serve.

    Excellent! No changes, just seasonal additions. Chopped zucchini, fresh snap peas, cucumber, green are limited by your imagination. I also learned on Cook Illustrated to add seasoning to ingredients and let sit a bit (1/2 hour) before mixing in the mayo. Seasonings absorb better to macaroni, instead of mayo.     This is a great recipe. I, too, upped the mayo (Hellman's Mayonnaise because it's the best), and I also added a dash of vinegar to give it a little zing.
