Easy crumb cake

    This is Mrs Hathaway's recipe for a deliciously easy to make cake. The simple vanilla sponge is sprinkled with a lovely cinnamon crumb topping just before baking. Serve with cream or on its own.

    Serves: 9 

    • 50g butter
    • 5 tablespoons caster sugar
    • 1 egg
    • 1/2 teaspoon vanilla extract
    • 200g plain flour
    • 1/4 teaspoon salt
    • 2 teaspoons baking powder
    • 150ml milk
    • Topping
    • 2 tablespoons plain flour
    • 2 tablespoons butter
    • 5 tablespoons caster sugar
    • 1/2 teaspoon ground cinnamon

    1. Preheat the oven to 190 C / Gas 5.
    2. In a large bowl, cream together 50g butter and 5 tablespoons sugar until smooth. Beat in egg and vanilla until well blended. Combine 200g flour, salt and baking powder; stir into the creamed mixture alternately with the milk. Spread evenly in a 23cm cake tin.
    3. In a small bowl, stir together 2 tablespoons flour, 5 tablespoons sugar and cinnamon. Add 2 tablespoons of butter, and rub into the dry mixture using your fingers until the mixture is crumbly. Sprinkle over the top of the cake.
    4. Bake for 25 minutes in the preheated oven, until a knife inserted into the centre comes out clean.
