Best Chocolate Cake with Fudge Frosting

About this recipe: A heavenly chocolate cake recipe that is taken to new heights with a luscious fudge frosting. Perfect for birthday cakes. You could also make two 23cm (9 in) round chocolate cakes instead of one large chocolate cake, if desired.

  • 110g butter
  • 110g margarine
  • 250ml water
  • 4 tablespoons unsweetened cocoa powder
  • 250g plain flour
  • 400g caster sugar
  • 120ml milk
  • 1 tablespoon distilled vinegar
  • 2 eggs
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon vanilla extract
  • Fudge frosting
  • 6 tablespoons butter
  • 4 tablespoons milk
  • 3 tablespoons unsweetened cocoa powder
  • 375g sifted icing sugar
  • 1 teaspoon vanilla extract

Method

  1. Bring to the boil the 110g butter, 110g margarine, water and 4 tablespoons cocoa. Remove from heat and add flour, sugar, 120ml milk and vinegar. Mix well. Then add: eggs, bicarbonate of soda and 1 teaspoon vanilla.
  2. Mix well until lumps are gone. Pour into greased 20x30cm cake tin. Bake at 200 C / Gas 6 for 20 minutes or until a skewer comes out clean.
  3. Fudge Frosting: Combine in saucepan 6 tablespoons butter, 4 tablespoons milk and 3 tablespoons cocoa. Bring to rolling boil. Remove from heat and add icing sugar and 1 teaspoon vanilla. Beat until smooth. Spread on cooled cake.
