    About this recipe: A simply delicious pasta salad that combines macaroni with ham, Cheddar cheese, mayonnaise, olive oil and vinegar. It's creamy but it's got a nice tang, too. The cucumber adds lovely crunch. Perfect to serve chilled for summer weekend barbecues in the garden!

    Serves: 8 

    • 500g macaroni
    • 120g mayonnaise
    • 1/2 cucumber - peeled, seeded and chopped
    • 1 tablespoon dried onion
    • 110g diced ham
    • 120g grated Cheddar cheese
    • 3 tablespoons olive oil
    • 3 tablespoons white wine vinegar
    • salt and pepper to taste

    1. In a large pot of salted boiling water, cook macaroni until al dente, rinse under cold water and drain.
    2. In a large bowl, combine the pasta, mayonnaise and mix well. Stir in cucumber, onion, ham and cheese. Mix well. Drizzle oil and vinegar over top and toss. Refrigerate for at least 4 hours.
