225g cream cheese, softened
5 tablespoons caster sugar
1/8 teaspoon salt
175g plain chocolate chips
200g plain flour
200g caster sugar
4 tablespoons unsweetened cocoa powder
1 teaspoon bicarbonate of soda
1/2 teaspoon salt
75ml vegetable oil
1 tablespoon cider vinegar
1 teaspoon vanilla extract

Preheat oven to 180 C / Gas 4. Line muffin tins with paper cases or lightly grease.
In a medium bowl, beat the cream cheese, egg, 5 tablespoons sugar and 1/8 teaspoon salt until light and fluffy. Stir in the chocolate chips and set aside.
In a large bowl, mix together the flour, 200g sugar, cocoa, bicarbonate of soda and 1/2 teaspoon salt. Make a well in the centre and add the water, oil, vinegar and vanilla. Stir together until well blended. Fill muffin cases 1/3 full with the cake mixture and top with a dollop of the cream cheese mixture.
