    About this recipe: A colourful fruity salsa to serve with chicken or fish. Great on a warm summer day.

    Serves: 8 

    • 1 mango - peeled, stone removed and diced
    • 1 papaya - peeled, pips removed and diced
    • 1 large red pepper - seeded and diced
    • 1 avocado - peeled, stone removed and diced
    • 1/2 red onion - peeled and diced
    • handful chopped fresh coriander
    • 2 tablespoons balsamic vinegar
    • salt and freshly pepper to taste

    1. In a medium bowl, mix mango, papaya, red pepper, avocado, red onion, coriander and balsamic vinegar. Season with salt and pepper. Cover, and let sit at least 30 minutes before serving.
