Best black walnut cake

    This recipe makes good use of black walnuts. If you can't find black walnut extract, simply skip it - the cake will still be delicious. Try icing this cake with your favourite cream cheese icing recipe.

    Serves: 24 

    • 110g butter, softened
    • 110g margarine, softened
    • 325g caster sugar
    • 350g plain flour
    • 1 teaspoon salt
    • 2 teaspoons baking powder
    • 3 eggs
    • 270ml milk
    • 1 teaspoon vanilla extract
    • 1 teaspoon black walnut extract
    • 120g chopped black walnuts

    1. Preheat oven to 180 C / Gas 4. Grease and flour two 23cm round cake tins. Sift flour, salt and baking powder together and set aside.
    2. In a large bowl, cream butter, margarine and sugar until light and fluffy. Add eggs one at a time and beat in well. Add flour mixture alternately with milk and mix well. Add vanilla and walnut extract. Fold in nuts.
    3. Pour cake mixture into prepared tins. Bake at 180 C / Gas 4 for 35 to 40 minutes, or until a skewer inserted into the cake comes out clean.

    I been looking for Walnut cake recipe with light, soft and not to buttery test and I try this one!
