About this recipe: A moist and delicious bran muffin recipe, made with both plain and wholemeal flours, as well as wheat bran, of course. A bit of treacle provides sweetness and depth of flavour, and buttermilk makes it moist.


Serves: 24 

  • 125g plain flour
  • 120g wholemeal flour
  • 85g wheat bran
  • 1/2 teaspoon salt
  • 1 1/4 teaspoons bicarbonate of soda
  • 6 tablespoons treacle
  • 450g buttermilk
  • 1 egg, beaten
  • 45g butter, melted

  1. Preheat oven to 180 C / Gas 4. Grease muffin tins or line with paper cases.
  2. In a large bowl, combine flour, wholemeal flour, wheat bran, salt and bicarb. Add treacle, buttermilk, egg and butter; stir just to moisten. Scoop batter into prepared muffin cases. Cases should be 2/3 to 3/4 full.
  3. Bake at 180 C / Gas 4 for 20 minutes, or until a skewer inserted into the centre of a muffin comes out clean.
