    About this recipe: A luscious brandied fruit topping that you can serve with a variety of desserts and puds. Simply use it to top vanilla ice cream for an elegant dessert, or even use it in trifles. You can keep it in the fridge for months, and it's quite forgiving if you want to change the proportions of fruit to suit your own taste.

    Serves: 64 

    • 80g raisins
    • 125g mandarin oranges
    • 175g pitted prunes
    • 150g caster sugar
    • water to cover
    • 1 (410g) tin sliced peaches, chopped
    • 1 (410g) tin pineapple pieces
    • 180ml brandy

    1. In a large saucepan combine raisins, mandarin oranges, prunes, sugar and water to cover. Simmer over medium heat until syrupy, about 10 minutes.
    2. Stir in peaches, pineapple and brandy. Store in refrigerator.
