Buffalo chicken tortilla wraps

    If you like spicy Buffalo chicken wings, you will love these wraps - they're full of flavour, and you can customise them according to your family's tastes. Instead of blue cheese dressing you could use crumbled blue cheese, which would be equally delicious!

    Serves: 4 

    • 1 tablespoon vegetable oil
    • 1 tablespoon butter
    • 450g skinless, boneless chicken breasts, cut into bite-size pieces
    • 4 tablespoons hot sauce
    • 4 flour tortillas
    • 1 small lettuce, shredded
    • 1 stick celery, diced
    • 4-8 tablespoons blue cheese dressing

    1. Heat the vegetable oil and butter in a large frying pan over medium-high heat. Place the chicken in the pan; cook and stir until the chicken is no longer pink in the centre and the juices run clear, about 10 minutes. Remove the pan from the heat. Pour the hot sauce over the cooked chicken and toss to coat.
    2. Lay out the flour tortillas and divide the chicken evenly among the tortillas. Top the chicken with lettuce, celery and blue cheese dressing to taste. Fold in the sides of the tortilla and roll the wrap.

    This has got to be one of hubby's favorite meals. I make a buffalo sauce with 1/4 cup of melted butter and about 1/3 cup of hot sauce, and then season the sauce with some cracked pepper and garlic powder.     Yum! I did make a few minor changes, but this is a good recipe. I cooked my chicken breasts in salted water, then just tossed with Frank's Buffalo Wing Sauce and just a little melted butter.     Made some modifications, I cooked the chicken in simmering salt water for about 1.5 hours, until pull apart tender. Mixed together with 4 tbl melted butter, hot sauce, and garlic powder. Kids loved it for after school snack.  -  11 Mar 2009  (Review from Allrecipes US | Canada)
