You could use almost any fish fillet for this easy but tasty recipe. Tilapia, cod, salmon, sea bass - they'd all work a treat. If you don't have Cajun seasoning to hand, try using a mixture of chilli powder, cumin, oregano, thyme and black pepper.

Didnt find this worked good at all with both the flour, egg and buttermilk. Breadcrumbs didn't stick to the fish like they usually do when i dipp the fish in either milk/ egg or flour mixture. Next time will try just egg and buttermilk before dipping in breadcrumb mixture. I like the idea of the egg and buttermilk mixture. - 04 Jun 2014
