Toffee Icing

About this recipe: A delicious recipe for toffee icing that works a treat on plain sponge cake, chocolate cake, cupcakes, banana cakes and more. If you add more liquid, you can use this as a drizzle. Cream may be substituted for the milk for added richness.

Ingredients

Serves: 12 

  • 2 tablespoons butter
  • 3 tablespoons milk
  • 110g dark brown soft sugar
  • 120g icing sugar
  • 1/2 teaspoon vanilla extract

Method

Prep:10min  ›  Cook:5min  ›  Ready in:15min 

  1. In a saucepan over medium heat, melt the butter, and mix in 3 tablespoons milk and dark brown soft sugar. Boil vigorously for 1 minute.
  2. Remove from heat, and beat in 1/2 of the icing sugar. Cool slightly, and beat in the vanilla and remaining icing sugar. Add more milk if the mixture is too thick.

This toffee icing tastes delicious. It was the perfect consistency to spread over a tray bake cake. The only problem was the icing sugar clumped together in small clumps and had to be vigorously beaten into the mixture but it still left lots of small spots of icing sugar in the mix. - 18 Sep 2014
