Toffee Icing

    A delicious recipe for toffee icing that works a treat on plain sponge cake, chocolate cake, cupcakes, banana cakes and more. If you add more liquid, you can use this as a drizzle. Cream may be substituted for the milk for added richness.

    Serves: 12 

    • 2 tablespoons butter
    • 3 tablespoons milk
    • 110g dark brown soft sugar
    • 120g icing sugar
    • 1/2 teaspoon vanilla extract

    1. In a saucepan over medium heat, melt the butter, and mix in 3 tablespoons milk and dark brown soft sugar. Boil vigorously for 1 minute.
    2. Remove from heat, and beat in 1/2 of the icing sugar. Cool slightly, and beat in the vanilla and remaining icing sugar. Add more milk if the mixture is too thick.

    need more icing sugar but apart from that was good  -  20 Oct 2012


    I have been searching everywhere for a, simple, in the nicest use of the word, recipe for toffee icing. this is amazing. it took minutes to make and the consistency and taste are amazing. I noticed someone commented on the icing sugar not mixing properly, I sifted it first and used a whisk to mix it in. The icing does firm quickly, however i put the second half of the icing sugar in gradually to get the consistency i wanted, I don't think i used the whole of the second amount I also poured the icing on whilst still, barely, warm, it spreads better I will be using this all the time  -  14 Jun 2015


    This toffee icing tastes delicious. It was the perfect consistency to spread over a tray bake cake. The only problem was the icing sugar clumped together in small clumps and had to be vigorously beaten into the mixture but it still left lots of small spots of icing sugar in the mix.  -  18 Sep 2014
