    About this recipe: A superbly quick and easy snack that is healthy and tasty. The crunchy carrot here is sliced on the diagonal and used as a 'cracker'. You can get creative and add herbs, spices, lemon, etc. to taste.

    Serves: 4 

    • 1 large carrot, sliced diagonally into 5mm thick slices
    • 1 (170g) tin tuna in water, drained
    • 3 spring onions, chopped
    • 1 tablespoon mayonnaise

    1. Arrange slices of carrot on a plate or serving tray. In a small bowl, mix together the tuna, spring onions and mayonnaise. Spoon some onto each slice of carrot and serve immediately.
