About this recipe: A true cobbler recipe with a scone-like topping, made with fresh cherries, and perfect served warm with vanilla ice cream. You can use fresh cherries when in season, or frozen cherries if you have them.

Serves: 8 

  • 150g caster sugar
  • 45g butter, melted
  • 125g plain flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 120ml milk
  • 200g caster sugar
  • 1 tablespoon cornflour
  • 225ml boiling water
  • 500g fresh cherries, stones removed

  1. Mix 150g of the sugar, butter, flour, salt, baking powder and milk together. Place cherries in the bottom of a 23cm square tin. Spread topping over cherries.
  2. In a small bowl, combine 200g of sugar and cornflour. Stir in boiling water. Pour mixture over the topping.
  3. Bake at 180 C / Gas 4 for 45 minutes. Serve warm.

I made it using sweet fresh cherries. I thought it was odd pouring the cornflour mixture over the sponge mix but found the finished dessert absolutely delicious as did everyone else who tried it. Will definitely make this again. - 03 Jul 2013
