Cherry Rum Balls

    Moreish and addictive, these rum balls are great to have round the house at Christmas for unexpected guests. You can also make them to give as gifts. Get creative with the biscuit crumbs you use, though boudoir biscuits or amaretti biscuits work a treat.

    Serves: 24 

    • 175g plain chocolate, chopped
    • 125ml rum
    • 4 tablespoons golden syrup
    • 540g biscuit crumbs, such as boudoir, amaretti or digestive
    • 150g chopped pecans
    • 120g icing sugar
    • 24 glace cherries, halved

    1. Melt the chocolate and stir in the rum and golden syrup.
    2. Stir together the biscuit crumbs, pecans and 1/2 of the icing sugar. Drizzle the chocolate mixture over the crumb mixture and stir until blended.
    3. Shape mixture into 2.5cm balls. Roll balls in the remaining icing sugar. Place cherry half in centre of each ball, pressing down lightly. Store in an airtight container for several days to develop flavour.

    These rum balls are much dryer than most. I made them ahead of time but quite was worried that they would be completly dryed out by the time I had to serve them guests.
