Syd's chocolate cake

    A very rich but simple chocolate cake recipe. You can use two 23cm or three 20cm round cake tins instead; simply adjust the baking time as necessary.

    Serves: 24 

    • 120ml milk
    • 85g grated plain chocolate
    • 110g butter, softened
    • 300g caster sugar
    • 2 eggs
    • 175ml soured cream
    • 1 teaspoon bicarb of soda
    • 1 tablespoon water
    • 285g cake flour

    1. Preheat the oven to 180 C / Gas 4. Grease and flour one 20x30cm (9x13 in) tin.
    2. Grate the chocolate. In a small saucepan, boil the milk and chocolate until mixture forms a custard.
    3. Cream the butter and sugar. Add eggs and soured cream to the creamed mixture.
    4. Dissolve the bicarbonate of soda in water, and add to the creamed mixture. Add the flour, and mix thoroughly. Add the chocolate mixture and beat well. Pour into prepared tin.
    5. Bake for 40 minutes to one hour.

    Important: after reading how chocolate-less this cake seemed to be I used 5 TIMES the amount of chocolate required. I followed the rest of measurements exactly (only I used brown sugar instead of white, and plain unbleached flour that I sifted -instead of cake flour).
