Mild mango and red pepper salsa

    The sweet flavours of this mild salsa create a tropical topping for barbecued meats or fish. Add minced red chillies if you want to add some heat.

    Serves: 4 

    • 1 mango - peeled, stone removed and diced
    • 1 teaspoon extra virgin olive oil
    • 1/2 red pepper, chopped
    • 2 spring onions, thinly sliced
    • handful chopped fresh coriander
    • 1 lime, juiced
    • 1/4 teaspoon salt
    • 1 pinch cracked black pepper
    • 1 teaspoon honey

    1. Combine the mango, oil, red pepper, spring onions, coriander, and lime juice in small bowl. Stir to combine. Season to taste with salt, black pepper and honey. Refrigerate, or serve immediately.

    This was so good! I had it with pan fried sea bass at a Spanish Tapas restaurant and this recipe tasted so similar! I was impressed, as was my family when I made it xx  -  22 Jun 2011

    I loved this! I used 2 large mangoes, vidalia onion instead of green because that is what I had. Very refreshing, served it with a spicy steak and corn soft taco and black beans and rice.
