About this recipe:These mini meringues are oh-so moreish. Give them a go - they're low in fat and totally delicious. Be sure to use unsweetened cocoa, not sweetened drinking chocolate mix. You could omit the cocoa for plain meringues, studded with chocolate chips.
2 egg whites
100g caster sugar
1 teaspoon vanilla extract
3 tablespoons unsweetened cocoa
80g plain chocolate chips

Preheat oven to 120 C. Line 2 baking trays with parchment.
In large metal or glass bowl, beat the egg whites on high speed with an electric mixer until soft peaks form. Gradually add sugar while continuing to beat until they hold stiff peaks. Mix in the vanilla and cocoa on low speed, then fold in chocolate chips by hand. Drop small mounds of the mixture onto the prepared baking trays, spacing 2.5cm apart.
Bake for 1 hour in the preheated oven. Turn off oven, and leave the meringues in the oven for 2 more hours, or until centres are dry. Remove from tray and store in an airtight container.
