375g plain flour
1 1/2 teaspoons bicarbonate of soda
2 1/4 teaspoons baking powder
5 tablespoons unsweetened cocoa powder
300g caster sugar
1 1/2 teaspoons vanilla extract

Preheat oven to 180 C / Gas 4. Lightly grease two 23cm round cake tins.
Mix flour, bicarb, baking powder, cocoa and sugar into a large bowl. Stir in mayonnaise. Gradually add water and vanilla and blend until smooth. Pour cake mixture into prepared tins.
Bake at 180 C / Gas 4 for 30 minutes. Cool, remove from tins, and ice with your favourite chocolate icing if desired.
