About this recipe: This dairy free chocolate cake uses mayonnaise to get that richness and flavour that you'd expect from a dairy-laden cake. Don't be put off - it is delicious! Use regular full-fat mayonnaise for best results.

Serves: 24 

  • 375g plain flour
  • 1 1/2 teaspoons bicarbonate of soda
  • 2 1/4 teaspoons baking powder
  • 5 tablespoons unsweetened cocoa powder
  • 300g caster sugar
  • 350g mayonnaise
  • 350ml water
  • 1 1/2 teaspoons vanilla extract

  1. Preheat oven to 180 C / Gas 4. Lightly grease two 23cm round cake tins.
  2. Mix flour, bicarb, baking powder, cocoa and sugar into a large bowl. Stir in mayonnaise. Gradually add water and vanilla and blend until smooth. Pour cake mixture into prepared tins.
  3. Bake at 180 C / Gas 4 for 30 minutes. Cool, remove from tins, and ice with your favourite chocolate icing if desired.

This is not actually dairy free, as mayonnaise has eggs in, and eggs are classed as dairy. - 15 Feb 2015
