Chocolate Oat Cake

    A wholesome chocolate cake that is easy to make. A touch of oats combined with plain flour, brown sugar, eggs, butter and unsweetened cocoa. Enjoy as is or with chocolate icing.

    Serves: 12 

    • 40g rolled oats
    • 110g butter
    • 225ml boiling water
    • 325g dark brown soft sugar
    • 2 eggs, beaten
    • 1 teaspoon vanilla extract
    • 125g plain flour
    • 1 teaspoon bicarbonate of soda
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 4 tablespoons cocoa powder

    1. Preheat oven to 180 C / Gas 4. Grease one 20cm square tin.
    2. In a large bowl, mix together the rolled oats and butter. Mix in boiling water. Set aside to cool.
    3. Beat together the dark brown soft sugar, eggs and vanilla; add to cooled oat mixture and mix well.
    4. Sift together the flour, bicarb, baking powder, salt and cocoa. Add to wet ingredients and mix well. Spread into the prepared tin.
    5. Bake at 180 C / Gas 4 for 40 minutes. Remove from oven, allow to cool, then remove from tin.

    I've made this cake three times now, the last two I made I only used half the amount of sugar listed and it was still sweet enough!! Brilliant chocolate cake!!  -  06 Oct 2012


    So easy, totally scrumy and "hidden oats", however next time I will try and reduce sugar, sub with fruit? Keeps well too! Thanks for sharing!  -  25 Sep 2012


    Nice recipe and easy to make, Im not sure what the oats add though. I used about half the sugar based on the reviews and it turned out ok  -  14 Jul 2013
