Raspberry walnut salad

    This is a healthy, colourful salad. It has easy to find ingredients, is easy to make and tastes delicious. You can add shredded poached chicken to this salad to create a filling main.

    • 1 (300g) bag mixed salad greens
    • 1 punnet raspberries
    • 30g (1 oz) chopped walnuts
    • 1 avocado - peeled, stone removed and diced
    • balsamic vinegar and extra virgin olive oil to taste

    1. In a large bowl, toss together the salad greens, raspberries, walnuts and avocado. Dress with balsamic vinegar and olive oil to serve.
