About this recipe: This is a one-dish chocolate pudding recipe that couldn't be easier. A lovely, warm winter pud. The luscious chocolate sauce is revealed at the bottom of the baking dish after you tuck in!

Serves: 12

  • 125g plain flour
  • 150g caster sugar
  • 2 tablespoons unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 120ml milk
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla extract
  • 175g dark brown soft sugar
  • 4 tablespoons unsweetened cocoa powder
  • 350ml boiling water

Prep:10min  ›  Cook:40min  ›  Ready in:50min

  1. Preheat the oven to 180 C / Gas 4.
  2. In ungreased 23cm square baking dish, stir together flour, caster sugar, cocoa, baking powder and salt. Mix in milk, oil and vanilla with a fork until smooth.
  3. Spread mixture evenly over the bottom of the dish. Sprinkle with dark brown soft sugar and 4 tablespoons cocoa. Pour boiling water over all.
  4. Bake at 180 C / Gas 4 for 40 minutes. Let stand 10-15 minutes, then spoon into dessert dishes. Spoon the sauce from the bottom of the baking dish over each serving. Top with ice cream, custard or whipped cream, if desired.

You could try making individual puddings in oven-proof ramekins, if desired. Adjust baking time as necessary.

Try using 350ml of brewed filter coffee in place of the boiling water for a mocha flavoured pudding.

Fabulous, easy to do. Would halve the sugar and slightly less water because of that. - 01 Mar 2014

Wonderful! Made it twice in the last week for different guests and gone down well. Also doesn't create lots of washing up!! - 13 Oct 2013
