Preheat the oven to 180 C / Gas 4.
In ungreased 23cm square baking dish, stir together flour, caster sugar, cocoa, baking powder and salt. Mix in milk, oil and vanilla with a fork until smooth.
Spread mixture evenly over the bottom of the dish. Sprinkle with dark brown soft sugar and 4 tablespoons cocoa. Pour boiling water over all.
Bake at 180 C / Gas 4 for 40 minutes. Let stand 10-15 minutes, then spoon into dessert dishes. Spoon the sauce from the bottom of the baking dish over each serving. Top with ice cream, custard or whipped cream, if desired.
You could try making individual puddings in oven-proof ramekins, if desired. Adjust baking time as necessary.
Try using 350ml of brewed filter coffee in place of the boiling water for a mocha flavoured pudding.
