Rocky road chocolate cookies

About this recipe: A soft chocolate cookie that is reminiscent of rocky road thanks to mini marshmallows dotted on the top of each cookie. Very easy to make and fun to get the kids involved. Take care not to over-bake.

Ingredients

Makes: 4 dozen cookies

  • 110g butter
  • 170g plain chocolate chips
  • 200g caster sugar
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • 200g plain flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 120g chopped walnuts
  • 48 mini marshmallows

Method

  1. Preheat the oven to 200 C / Gas 6.
  2. In a small saucepan, melt together the butter and 1/2 of the chocolate chips, stirring frequently. Remove from heat and set aside to cool.
  3. In a medium bowl, stir together the melted chocolate mixture with the sugar, eggs and vanilla. Sift together the flour, baking powder and salt, stir into the chocolate mixture. Finally, stir in the chopped nuts and remaining chocolate chips.
  4. Drop dough by rounded teaspoonfuls onto ungreased baking trays. Press a miniature marshmallow into the centre of each cookie. Bake for 7 to 8 minutes in the preheated oven. Remove from baking trays immediately to cool on wire racks.
