Rum and Coconut Balls

    These treats are incredibly sweet, coconutty and oh-so-moreish. They are wonderful to snack on or to enjoy as an after dinner treat.

    Makes: 4 - 5 servings

    • 340g vanilla biscuits, crushed
    • 100g desiccated coconut
    • 120g finely chopped walnuts
    • 1 (397g) tin sweetened condensed milk
    • 4 tablespoons rum
    • 2 tablespoons icing sugar

    Prep:30min  ›  Extra time:1day4hr chilling  ›  Ready in:1day4hr30min 

    1. In a large bowl, toss together the crushed biscuits, coconut and walnuts. Stir in the sweetened condensed milk and rum; mix well. Refrigerate for 4 hours.
    2. Shape into 2.5cm balls. Roll in sugar. Store in covered container in refrigerator 24 hours before serving.

    GORGEOUS, GORGEOUS, GORGEOUS!!! These are a big hit! The balls themselves are nice, but dipping them in chocolate takes them to a whole new level of DELISH. I did some of them with the powdered sugar, some with white chocolate, some with milk chocolate and some are double-dipped... heh-heh-heh. I used coconut rum which is excellent and doubled it (1/2c.), because they were otherwise looking too dry. Lastly, I used a mixture of nuts - almonds, pecans & walnuts.
