Plump Raisin Cake

    This is a fantastic cake, which can be cut into bars and enjoyed for afternoon tea, elevenses or popped into packed lunches. It's flavoured with raisins, cinnamon and coffee.

    Makes: 1 25x38cm cake

    • 150ml hot water
    • 150g raisins
    • 1/2 teaspoon instant coffee powder
    • 1 teaspoon ground cinnamon
    • 110g margarine
    • 200g caster sugar
    • 2 eggs
    • 200g plain flour
    • 1/2 teaspoon bicarbonate of soda
    • 1/2 teaspoon baking powder

    1. Preheat oven to 180 C / Gas 4. Grease and flour a 25x38cm tin. Sieve together the flour, baking powder and bicarbonate of soda. Set aside.
    2. Pour hot water over raisins. Stir in instant coffee and cinnamon. Set aside to cool.
    3. In a large bowl, cream together the margarine and sugar until light and fluffy. Beat in the eggs one at a time. Beat in the flour mixture. Finally stir in the raisin mixture.
    4. Spread batter on prepared tin. Bake in the preheated oven for 20 minutes or until a skewer inserted into the centre of the cake comes out clean.

    We love raisins and coffee and wanted to give this a try. Cake was very good but cooked thinner than expected. Frosted with Cinnamon Coffee Frosting also from this sight. Very Good!  -  31 Jul 2007  (Review from Allrecipes US | Canada)


    I made it with applesauce instead of butter, which I think made it very dense. The flavours were nice, but the raisins sank to the bottom. Will try making it again with butter/ margarine and try adding raisins last after tossing them in some flour.  -  28 Dec 2016  (Review from Allrecipes US | Canada)
