Cucumber and avocado salad

    A wonderfully refreshing salad, best served chilled on a warm day. Enjoy at your next summer barbecue with grilled chicken or fish.

    Serves: 6 

    • 2 cucumbers, diced
    • 1 teaspoon salt
    • 80g diced red onion
    • 1 small red pepper, diced
    • 2 limes, zested and juiced
    • 4 tablespoons chopped fresh coriander
    • 1 tablespoon caster sugar
    • 1/2 teaspoon curry powder
    • 4 dashes hot pepper sauce
    • 2 avocados, peeled, pitted and diced

    1. Place the cucumber slices into a colander set in the sink and sprinkle with salt. Set aside and allow to drip.
    2. In a salad bowl, mix together the red onion, red pepper, lime zest and juice, coriander, sugar, curry powder and hot pepper sauce until thoroughly combined and the sugar has dissolved.
    3. Drain the cucumber slices and pat dry with kitchen towels. Stir the cucumbers into the salad. Gently toss the avocados with the salad and serve.

    Cook's Note:

    If you are not going to serve this immediately do not peel, chop and add the avocado until just before serving. Also, if you are in a real hurry, you can skip draining the cucumbers, but any leftovers you have will get watery.

    I made this for lunch today. I don't care for curry powder so I left it and the sugar out of the recipe. I added a few splashes of seasoned rice wine vinegar instead. I loved it!     This was excellent. Made for 2. I cut everything in half. I didn't have cilantro so I added 2 tbls of Epicure salsa seasoning. I used 3 tablespoons of Real lime and added two chopped up tomatoes. Would have been enough for four.  -  06 Mar 2011  (Review from Allrecipes US | Canada)
