A wonderfully refreshing salad, best served chilled on a warm day. Enjoy at your next summer barbecue with grilled chicken or fish.
If you are not going to serve this immediately do not peel, chop and add the avocado until just before serving. Also, if you are in a real hurry, you can skip draining the cucumbers, but any leftovers you have will get watery.
I made this for lunch today. I don't care for curry powder so I left it and the sugar out of the recipe. I added a few splashes of seasoned rice wine vinegar instead. I loved it!
