About this recipe: This is an African tomato chutney from Mozambique which uses ripe and flavourful cherry tomatoes.

Ingredients
Serves: 6 

  • 675g (1 1/2 lb) cherry tomatoes
  • 1 small onion, chopped
  • 1 spring onion, chopped
  • small handful chopped fresh coriander
  • 2 green chillies, chopped
  • salt to taste
  • 1 teaspoon lemon juice, or to taste

Method
Prep:20min  ›  Cook:10min  ›  Ready in:30min 

  1. Place cherry tomatoes in a medium saucepan. Add just enough water to cover the bottom of the pan. Bring to the boil over medium high heat, and let cook until tomatoes are soft and broken.
  2. In a medium bowl, mix together the onion, spring onion, coriander and chillies. Add hot cooked tomatoes, and mix well. Season with salt, pepper and lemon juice to taste.
