Light Cottage Cheese Bread

An easy bread, which requires very little prep. Simply add all the ingredients to the bread maker and let it do its magic. Enjoy with lashings of butter.

Lovely crust and really light and fluffy. I have a Panasonic sd-2500 and used the wholemeal rapid bake setting as that is a 3 hour setting. I added the ingredients in line with the the general guidelines in my manual (yeast and bicarb, flour, sugar, salt then wet ingredients with water last) and then a bit more flour as the recipe suggested as my dough felt a bit sticky. I put a tad less salt and sugar in and used coconut oil for the oil part (gives a slight coconut taste if you don't mind that) and also for half of the flour, used strong white bread flour. I will definitely make this again as it is higher in protein with the egg and cottage cheese  -  31 Jul 2015

Be forewarned - this makes more than 1 & 1/2 lbs of bread! I have a 1 & 1/2 lb breadmaker, and the dough from this recipe grew over and down the sides of the pan. The bread that I was able to salvage was good - very light, fluffy and tasty. My family loved it. Unfortunately, it made such a huge mess in my breadmaker which took so long to clean up that I have a grudge against this recipe now.  -  15 Sep 2002  (Review from Allrecipes US | Canada)
