About this recipe: A great alternative to the traditional apple pie. Grated courgettes are baked with a sweetened egg custard in a shortcrust pastry case.


Makes: 1 23cm tart

  • 1 (23cm) unbaked shortcrust pastry case
  • 125g peeled courgette, cubed
  • 2 eggs
  • 200g caster sugar
  • 110g butter, melted
  • 2 tablespoons plain flour
  • 1/2 teaspoon vanilla extract
  • 60g plain flour
  • 110g dark brown soft sugar
  • 50g butter

  1. Preheat oven to 180 C / Gas 4.
  2. Puree the courgette in a food processor. Transfer to a bowl and beat in the eggs, 200g sugar, 110g butter, 2 tablespoons flour and vanilla. Pour into the pastry case.
  3. Place 60g flour, dark brown soft sugar and 50g butter into a bowl. Rub the butter into the mixture until it resembles coarse crumbs. Sprinkle evenly over the filling.
  4. Bake in preheated oven until the filling is set and the topping is lightly browned, about 45 minutes. Allow to cool for at least 30 minutes before serving.
