Courgette cake traybake

    Once you make these delicious treats, they will become a firm favourite. These cake slices are moist, cinnamon-spiced and dotted with coconut, dates and raisins.

    Makes: 1 (20x30cm) tin

    • 175g margarine, softened
    • 100g caster sugar
    • 110g dark brown soft sugar
    • 2 eggs
    • 1 teaspoon vanilla extract
    • 225g plain flour
    • 1/2 teaspoon salt
    • 1 1/2 teaspoons baking powder
    • 55g desiccated coconut
    • 110g chopped pitted dates
    • 110g raisins
    • 225g grated courgettes
    • Topping
    • 15g margarine, melted
    • 2 tablespoons milk
    • 1 teaspoon vanilla extract
    • 1/4 teaspoon ground cinnamon
    • 120g icing sugar
    • 115g finely chopped walnuts

    1. Preheat oven to 180 C / Gas 4. Grease a 20x30cm baking tin.
    2. In a large bowl, cream together the butter, caster sugar and dark brown soft sugar. Mix in eggs and 1 teaspoon vanilla until fluffy. Sieve together the flour, salt and baking powder; stir into the creamed mixture. Stir in the coconut, dates, raisins and courgettes. Spread cake mixture into the prepared tin.
    3. Bake in preheated oven for 35 to 40 minutes.
    4. Meanwhile, make the icing. Mix together the margarine, milk, 1 teaspoon vanilla, cinnamon and icing sugar. Drizzle icing over cake while still warm. Sprinkle chopped nuts over icing. Cut into bars when cool.

    New to baking and followed the recipe to letter (although did add a little more cinnamon to the topping as I love the flavour). It turned out perfect and was much enjoyed by the ladies at the church coffee morning. In fact had to share the recipe with several of the ladies!  -  20 Mar 2017


    Just made this for the first it. I'm not a nut fan so substituted the walnuts for dried cranberries which my two and a half year old daughter declared delicious. A brilliant way to use up some of the glut of courgettes from our allotment.  -  14 Aug 2014


    Really tasty. I made it with only 100g of butter and 150g of sugar and also added apples and spices. Worked so well!  -  16 Apr 2013
