About this recipe:These muffins are incredibly moist and delicious. Once you make them, they will become a firm favourite. They are especially good around wintertime when cranberries are in-season.
Makes: 12 muffins
250g unsweetened apple sauce
75ml vegetable oil
1 eggs, beaten
250g plain flour
100g caster sugar
1 teaspoon bicarbonate of soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
110g fresh or frozen cranberries, chopped
60g pecans, chopped

Preheat oven to 180 C / Gas 4. Grease and flour a muffin tin.
In a small bowl, mix together apple sauce, oil and egg. In a large bowl, combine flour, sugar, bicarbonate of soda, cinnamon and salt. Make a well in the centre and pour in egg mixture. Stir until just moistened. Fold in cranberries and pecans. Spoon into muffin tin until 2/3 full.
Bake in the preheated oven for 25 to 30 minutes or until a skewer inserted into the centre comes out clean. Cool in tin for 2 minutes before removing.
