Cranberry oat cookies

    Cookies spiced with cinnamon, nutmeg and orange zest, dotted with oats, cranberries and walnuts, then drizzled with an orange icing.

    Ingredients
    Makes: 28 cookies

    • For the Cookies
    • 125g plain flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon ground cinnamon
    • 1/4 teaspoon ground nutmeg
    • 110g butter, softened
    • 175g dark brown soft sugar
    • 1 egg
    • 4 tablespoons milk
    • 1 teaspoon grated orange zest
    • 125g porridge oats
    • 80g chopped cranberries
    • 30g chopped walnuts
    • For the Icing
    • 120g icing sugar
    • 1/2 teaspoon grated orange zest
    • 1/4 teaspoon vanilla extract
    • 2 tablespoons orange juice

    Method

    1. Preheat oven to 190 C / Gas 5. Grease baking trays.
    2. Sieve together the flour, baking powder, cinnamon and nutmeg, set aside.
    3. In a medium bowl, cream the butter and sugar. Stir in the egg, milk and orange zest. Add dry ingredients, mix until well blended. Stir in the oats, cranberries and nuts.
    4. Drop tablespoons of the batter onto prepared baking trays about 5cm apart. Bake for 10 to 12 minutes in the preheated oven, cookies should be lightly browned. Remove to cool on wire racks.
    5. Meanwhile, stir together the icing sugar, orange zest and vanilla. Stir in the orange juice 1 tablespoon at a time until desired consistency is reached. Drizzle onto cooled cookies.

    These cookies are wonderful! What an interesting mix of ingredients. They do not flatten out; they are somewhat cake-like in the center, but slightly crispy on the edges. My family and I loved them.  -  03 Dec 2002  (Review from Allrecipes US | Canada)

    What a great cookie! They came out perfect, moist and delicious. I didn't have any nutmeg, so I substituted pumpkin pie spice for the cinnamon and nutmeg. I also used craisins instead of regular cranberries. The whole family loved them!  -  22 Dec 2002  (Review from Allrecipes US | Canada)
