    About this recipe: This creamy pasta will be loved by everybody. Fettucine and crayfish are baked together in a cheesy sauce. Enjoy with crusty bread and a side salad.

    Serves: 6 

    • 90g butter
    • 50g chopped spring onions
    • 1 green pepper, chopped
    • 1 clove garlic, finely chopped
    • 1 tablespoon plain flour
    • 450g crayfish, peeled
    • 225g processed cheese, such as Kraft singles, unwrapped and chopped
    • 250ml single cream
    • 2 teaspoons Cajun seasoning
    • 1 large tomato, chopped
    • 450g dry fettuccine pasta
    • 40g grated Parmesan cheese

    1. Melt butter in a large frying pan and saute the spring onions, green pepper and garlic until onions are opaque. Stir in flour and cook for 7 minutes, stirring frequently.
    2. Add crayfish meat; cover and simmer for 20 minutes.
    3. Stir in the processed cheese, cream, Cajun seasoning and tomato. Cover and simmer for another 20 minutes.
    4. Meanwhile, bring a large pot of lightly salted water to the boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Preheat oven to 180 C / Gas 4. Grease a 20x30cm baking dish.
    5. Mix together the sauce and pasta and transfer to the prepared baking dish. Sprinkle with Parmesan cheese and bake for 20 minutes or until bubbly.
