About this recipe: This wonderful dish requires very little prep time. Chicken is cooked in a slow cooker with a creamy chipotle sauce. Enjoy with rice, pasta or potatoes.


Serves: 4 

  • 4 skinless, boneless chicken breast fillets
  • 60g melted butter
  • salt and ground black pepper to taste
  • 2 cloves garlic, finely chopped
  • 1 (295g) tin condensed cream of chicken soup
  • 125ml chicken stock
  • 225g cream cheese, cut into cubes
  • 3 chipotle chillies in adobo sauce, finely chopped
  • 1 tablespoon adobo sauce from chipotle chillies

  1. Place the chicken breasts into a slow cooker, brush with butter and sprinkle with salt, pepper and garlic.
  2. Pour in the soup, chicken stock, cream cheese, chillies and adobo sauce. Stir the mixture gently. Cover, set the cooker to Low and cook for 6 hours.

Chipotle chillies in adobo sauce

Can be purchased in Mexican speciality shops or online.
