Crunchy Chocolate Chip Cookies

    These cookies have the perfect balance of flavours and textures. They are chewy, crunchy and packed full of oats, corn flakes and chocolate chips.

    Makes: 60 

    • 450g plain flour
    • 2 teaspoons bicarbonate of soda
    • 1 teaspoon salt
    • 225g margarine
    • 150g dark brown soft sugar
    • 200g caster sugar
    • 2 eggs
    • 2 teaspoons vanilla extract
    • 250ml vegetable oil
    • 1 tablespoon milk
    • 80g porridge oats
    • 90g sugar-frosted corn flakes cereal, such as Frosties, crushed
    • 340g plain chocolate chips

    1. Preheat oven to 180 C / Gas 4. Grease baking trays. Stir together the flour, bicarbonate of soda and salt; set aside.
    2. In a large bowl, cream together the margarine, dark brown soft sugar and caster sugar until smooth. Beat in the eggs, one at a time, then stir in the vanilla, vegetable oil and milk. Blend in the flour mixture before stirring in the oats, frosted corn flakes and chocolate chips. Drop heaped spoons of the batter onto baking trays.
    3. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking tray for 5 minutes before removing to a wire rack to cool completely.

    These are the best chocolate chip cookies ever! They are crunchy and delicious. I use 3 tsp of baking soda and only 1 egg. Also, you can use regular corn flakes (instead of sweetened) and quick oats. Nuts are optional.  -  30 Jun 2002  (Review from Allrecipes US | Canada)
