    About this recipe: This fudge is simple to make and oh-so-good. They make perfect food gifts and are excellent for when you have a sugar-craving. Store them somewhere safe, otherwise they'll be gone before you know it!

    Makes: 1 20 or 23cm square tin

    • 450g dark brown soft sugar
    • 175ml evaporated milk
    • 30g butter
    • 1 teaspoon vanilla extract
    • 55g chopped walnuts

    1. Butter a 20 or 30cm square tin.
    2. In a large heavy saucepan, stir together the dark brown soft sugar and evaporated milk. Bring to the boil over medium-high heat. Cook until the temperature reaches between 112 to 116 degrees C or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface.
    3. Remove from the heat and stir in the butter, vanilla and walnuts. Continue to beat with a sturdy spoon until the mixture looses its gloss. Pour into the prepared tin. Score into squares with a knife then set aside until firm, about 5 minutes. Cut into squares and serve or store in an airtight container in the refrigerator.
